Pumpkin Seed Snack

I thought I would share a little recipe that I do every year for a roasted pumpkin seed snack. After carving your fall pumpkin, you can enjoy a snack from it. Save the seeds inside and follow this recipe:

After you finish cleaning out the inside of the pumpkin, wash the pumpkin seeds thoroughly.
In a large bowl, dissolve 2 Tbls. of salt in enough water to cover the seeds. Soak the seeds in the salt water overnight.
Drain them and put them in a large, deep-frying pan.
At first, cook them over medium heat, stirring and turning them about every three minutes. As soon as the seeds look dry, turn the heat to low and begin stirring them constantly.
When they begin to make popping noises, check the time. Stir them for 5 more minutes.
Remove them from the heat and let them cool. Store them in a tightly covered jar.
You can eat the seeds in two ways: Just pop then into your mouth or remove the shells and eat only the meat inside.
To remove the shells, crack the seeds along the edges with your teeth. Enjoy!
